Black Staining Polypore is an amazing mushroom to utilize in salt and spice blends. When eaten fresh it often has a tough texture, but smoked and blitzed with salt it makes an incredible seasoning blend that adds a cool dark color to your food, not unlike black salt. We love to add this to soup broths, rubs, marinades, and more. As always, we lovingly harvest these mushrooms from all over western North Carolina.
